1C flour
3 eggs
1 1/2C milk
Salt
Butter or oil for the pan
Filling
1C ricotta cheese
Sugar to taste
Haskaps, as many you can put in! And on top!
To make this recipe even healthier use coconut oil for the pan, put agave syrup into the cheese instead of sugar. Replace 1/4C of the flour with a mixture of Chia and flax seeds. Note the Chia seeds will make the mixture thick so don't put a lot in the pan and make sure you spread it out or you'll have thick crepes!
Haskap Soda - Add 2 tbsp Haskap Syrup (or to taste) to your soda water with a squeeze of lemon and a leaf of basil for a delicious refreshing drink.  Skip the lemon and basil for the kids - they will love it!
